
RECIPE – Cream of Broccoli & Leek soup
A great soup for the cooler months, and made souper easy (see what I did there) in the Optimum 9400 blender from Froothie. It can of course be made in any blender, the only difference is you’ll then need to heat in a saucepan.
RAW CREAM OF BROCCOLI & LEEK SOUP
(Serves 2)
- 1/2 medium avocado
- about 1/2 large zucchini
- 1 stalk celery, roughly chopped
- 1/2 medium head of broccoli
- about 1/4 piece of leek, roughly chopped
- 1-2 tsp freshly squeezed lemon juice
- 1 tsp miso or tamari sauce
- 2 cups warm or hot water
- dash cayenne pepper
- salt & pepper to taste
- Meredith Dairy Goats Cheese for crumbling on top (optional)
1) I first browned the leek in a little bit of light olive oil as I find the raw taste a little too overpowering to put straight into the blender
2) Process all ingredients in the OPTIMUM blender (or an alternative good working blender with a sharp blade system), until smooth & creamy. If using the Optimum blender, I let it blend on Speed 10 for 4-5mins so it also heats up – if using another blender, just blend until smooth then heat in a saucepan.
3) Dollop the goats cheese on top and serve with nice crusty sourdough bread…..or have it solo!
